Well, I think that the traditional western open-world model with main quests, side quests, hundreds of locations, collectibles and characters has probably peaked with TW3 and Horizon this generation. Is it worth to continue to improve it? Maybe, but we're already past the point of diminishing return...

I agree with the gist of what you're saying, although I'd like to point out that, in theory at least, open-world structure and narrative pacing aren't mutually exclusive, but in practice and due to other facets of modern design trends, it's fairly obvious how the two elements are often contradictory...
