Yeah,
Spoiler: show Cainhurst is fantastic. It's also possible to completely miss a really interesting NPC in that area, so I hope you discovered the secret to finding them.
Dark Souls pulls the same trick with
Spoiler: show Painted World of Ariamis which is an equally amazing area.

Found myself back at the church lair of Vicar Ameila last night, and got ripped a new one by a recently appeared NPC hunter.

Pretty sure it was a woman.
Got her down to about half health before she opened up my innards with a brutal, slicing combo.

Spoiler: show The NPC you battle changes based on whether you follow Eileen the Crow's quest line or not. If you do, it's not Eileen the Crow, it's some one else. If you don't, it's Eileen the Crow.

I had to use this trick. I fought him countless times and couldn't beat him fair and square.

Finally entered the lost/hidden village last night, as well as defeating a couple of NPC hunters (one of which I'd completely forgotten about from very early in the game.
One NPC I didn't defeat was the one I encountered following up the above quest mentioned by Josh.
Despite taking half his health right off the bat with a nasty, sly sneak visceral attack to the back
Spoiler: show Sir Alfred the Executioner proceeded to slap me twice with his big wagon wheel of death and I was pulp.
Also uncovered a nice 'grinding' area full of mortar-boarded slime-students, worth about 15000 blood echoes per short visit.

Because, boy oh boy, that area can go to hell.

It's really annoying that you have to do this.
I finished the game, and have little interest in playing through part of it again before I can play the DLC. If I could just jump in and play the new content I'd be all over it but due to the fact I can't do that I can't see myself buying it. Such a shame.

If you've got a New Game + character, you'd be surprised how quickly you can get through the first section of the game. Accessing the Bloodborne DLC is much easier than accessing the Dark Souls DLC.
